"Farine de châtaigne corse – Farina castagnina corsa" was awarded PDO and CDO accreditation (Protected/Controlled Designation of Origin) in recognition of ten centuries of accumulated tradition and expertise.
This official seal of approval provides a guarantee that this chestnut flour is produced:
- in Corsica
- using local chestnut varieties
- according to time-honoured traditions and practices
- using no chemical additives.
Chestnuts harvested in this particular way are of a superior quality, possessing a classic, distinctive flavour.
Corsican chestnut flour is known for its purity and fineness, sweet, biscuity flavour and melt-in-the-mouth texture! In order to guarantee the nutritional content and taste quality of this product, the flour is vacuum-packed for store distribution purposes. It is sold in standard packaging at markets and when bought directly from the producer. In order to maintain freshness, it should be kept in the fridge or in the freezer for extended use.
Its unique flavour makes it a highly appealing culinary ingredient, and as such it is used in a wide variety of recipes: savoury and sweet, traditional or modern. It features in a number of signature dishes such as sweet beignet fritters, nicciou cakes and pulenda bread. However, it can also be used to replace wheat flour in many common products such as bread, pasta, pancakes, biscuits and meat rubs...
It also possesses anti-allergenic properties and is consequently prescribed particularly for people allergic to gluten as well as for some protein allergies.
