With a smile as genuine as his handshake, Charles Agostini welcomes visitors to his workshop and shop in the village of Morosaglia with unabashed pleasure. Alongside his affable character comes artisanal pride, with which he gladly shows off the quality and diversity of his products.


Before becoming a master of making nougat, spreads, and chestnut or hazelnut canistrelli (typically Corsican biscuits),
 Charles Agostini was a communal employee in the area of Ponte Leccia. “One day, I wanted a change, to work for myself.
I began planting hazels in Cervioni while my wife would work on various recipes.

 Coming back from the farm, we would try the products together and adjust recipes. When we were satisfied with the result, we’d begin production. The range of products we have on offer today is the result of our own work, our teamwork, and our harvests.”

Charles is certainly fond of his dual role as an artisan and producer. “I am proud to work with the hazelnuts from our farms. We have total control over all stages of production.” Today, the quality of his hazelnut or chestnut spreads, the softness of his nougats, or the crunch of his canistrelli have widely won over the palates of gourmets in Corsica and elsewhere.
