As a boy, Joseph used to go with his uncle to the local markets. Eighteen years later, after having been in Nice for just a few months, he found he had only thing on his mind: returning to Prunete farm, the playground of his childhood. As a consequence he enrolled at the Agricultural College in Borgo in 1981 to keep the family tradition going: "Market gardening is a tradition in our family. My great grandfather and my paternal great-uncle started growing fruit and vegetables in 1950."

And Joseph had no intention of stopping while the going was so good. He decided to reclaim the property’s mill. This mulinu, built over forty years ago, is the key element in promoting the olive oils of this Protected Appelation of Origin (AOC) of which Joseph is so proud:

"The olive trees, which enable us to produce the Couvent de Cervioni oil, were planted nearly 300 years ago and the olives from the young orchard on the east coast are used to extract the Moulin de Prunete oil."

These two oils have received many awards at the Concours Général Agricole de Paris and Nyons. His son, Thierry, is set to take his place one day - he has also been running his own farm since 2008. Together, father and son admit to they don’t count the hours they spend at the Moulin de Prunete... "We are rigorous and, above all, we love our trade more than anything else." Joseph adds enthusiastically: "If Corsican olive oil benefits from the efforts of the people who produce it, then that will be a big enough reward for us!"
