Living off the land and working with nature and the family has always been Ange-Joseph Pastinelli’s vocation, as the son and grandson of farmers himself. In the small, sun-soaked village of Olmeta di Tuda, overlooking the Gulf of Saint-Florent, on a plot of almost 10 acres, he moved in and set to work planting 780 olive trees.
His perfectly-pruned trees receive constant attention and enjoy ideal conditions, producing two olive varieties: Biancaghja and Ghjermana, which, when processed, provide oils with complex flavours. "Expressing the essence of my land by providing visitors with a high-quality, crafted oil is a real source of pride for me!" he says with a broad smile.
A Grotella, his AOP-certified oil, is partially refined in the cellars of his house where a large area has been fitted out to filter and decant the precious liquid into vats, and to bottle and label the oils.
Tasting sessions are organised on the estate, in the shade of trees or in beautiful dry stone buildings, inspired by ancient paghjaghji (cabins), which have been fully restored.
