Cyril Pompeani chose to resuscitate a small municipal chestnut grove in his village to produce the traditional Corsican chestnut flour, with the PDO label. In fact, Marignana, a small mountain village, located at an altitude of eight hundred metres, a stop-over very much appreciated by sea and mountain walkers, is also famous for its majestic chestnut plantation. He has cleared and maintains three hectares* of land, blending traditional practices with modern processes. Revitalising the land and trees, harvesting by hand, drying traditionally in wooden kilns (the dryer is on site under the chestnut trees), sorting and oven-loading, before the final mill process...the quality of the flour depends on following this meticulous procedure. Strength, patience and courage - these are the values passed on by our “memory tree” and are now alive, producing 800 kgs of pure, fine, scented flour. And to diversify, Cyril and his family are also involved in the production of home-made jams - from figs, plums, and of course sweet chestnuts - currently on sale at different produce outlets and rural fairs. Very soon, a visitor zone will be built in situ, where the delicious Pompeani family's produce can be tasted.
